The above article is fascinating. I have made kefir from milk, but I do not do well on dairy and developed mucous from hades.

Very good article! I drink kefir daily and enjoy the health benefits, especially for good digestion.
I make my own as the commercial products are either pasteurized or have sugar and other additives.

Kefir is a great addition to your meals. I use it in place of milk. I believe it is necessary for good health all over. When I do not drink it, I notice the difference and get right back to it. Thank you for a very good article.

Does kefir have alcohol content? i am allergic to alcohol and i have been reading articles that say kefir is up to 7% alcohol.

I also don’t have dairy products in the fridge but make and drink water kefir – is this as good for weight loss as milk kefir please?

To make kefir you have to start with kefir grains. They are available on line or from most health food stores. They resemble white pea-size grapes. The ‘grains’ (about a tablespoon) are put in a pint of milk. Whole, low fat, or skim, and left on the kitchen counter. I use a quart mason jar. The kefir is ready in 24 hours. Pour the kefir through a strainer and start again with another pint of milk. The grains will increase so eventually you will have extra to give to a friend to start their own batch.

Just put water kefir recipe into the search engine and you will find loads of recipes – honey is not particularly good but it does need sugar or agave to feed on.
Also, you can convert milk kefir grains to become water kefir grains but you need to put them back into milk every now and again to keep them alive. Just search for all these things and you will find a massive amount of information on the net – that is how I am learning.

Water kefir must be made with ‘water kefir grains’, which can be obtained over the internet. They cost next to nothing and some sources only require the shipping cost. The ingredients are: water, sugar or honey, lemon juice, and a dried fig or a couple of dates. It takes about 48 hours to make a quart.
